This is a quick and easy way of adding a serving of vegetables in your daily meal plan.
Preparation time: 25 minutes
Ingredients:
1 zucchini, sliced
1 yellow squash, sliced
½ chopped red pepper
2 tomatoes, chopped
¼ c. fat-free Italian dressing
2 c. brown rice, cooked
¼ cup soy parmesan cheese
Nonstick cooking spray
Utensils:
knife (you will need the help of an adult assistant)
2 - quarter covered casserole dish (microwave)
microwave (you'll need the help of an adult assistant)
measuring cup
Getting There:
Spray pan with cooking spray.
Mix vegetables and dressing in the pan.
Cook the vegetables in the microwave for 10 minutes, stirring every 2-3 minutes.
Sprinkle Parmesan cheese over the vegetables.
Serve vegetables over rice.
Serves 4
